Is there a more festive drink than Baileys? I think not! Being dairy free means that for 10 years now I haven’t been able to sip on a Baileys over Christmas, which I’ve actually really missed.
About 3 years ago I searched for a way to enjoy Baileys without the dairy and I tried a few vegan recipes online. Some recipes can be really hit and miss, however as with any recipe, you just need to have a play and tweak the ingredients to suit your personal taste preference.
I always follow the same recipe (below), and tweak or add flavour depending on what I’m feeling at the time. Sometimes I add a couple of drops of peppermint oil, or a few drops of orange flavouring to create a mint Baileys or chocolate orange flavour. You can obviously use different whiskey, which will make your liquor stronger in flavour or milder, again, it’s all about your preference! My boyfriend loves whiskey and used to be a bartender so when it comes to cocktails or anything to do with drink he’s very particular so I’m pretty lucky that I have a great selection of drinks, including whiskey to choose from. I won’t tell him that I used to make this with honey flavoured Jack Daniels or I’ll be in a lot of trouble (it is nice though haha)!!
Follow the basic steps below and add your own twist!
75 ml of whiskey (sometimes I use honey whiskey for a sweeter taste)
50 ml coffee
1 teaspoon vanilla extract (optional and if using honey whiskey leave this step)
400 ml coconut milk
4 tablespoons agave syrup
Don’t forget to add your flavouring if you’re feeling like mixing it up!
Mix all together in a mixing glass or shaker and serve in a tumbler over ice.
