Festive Pancakes

You probably know by now that every Saturday I have pancakes for brunch, and this is my tried and tested pancake recipe that I really enjoy making and eating!

The best thing about pancakes is that you can finish them with so many different combinations of toppings, so you can make them super festive during the holidays!

To make my favourite pancakes simply do this!

135g gluten free flour
1 tsp baking powder
½ tsp salt
2 tbsp coconut sugarx
130ml almond milk
1 large Oggs egg
2 tbsp vegan butter

Mix the gluten free flour, baking powder, salt and coconut sugar into a bowl. In another bowl, mix the vegan butter, almond milk and Oggs egg (you can also use aquafaba, or another egg replacement). Mix both bowls of mixture together and let it stand for a few minutes. The longer you leave it the thicker it will be, so if you want your pancakes to be super thick and fluffy then leave them for up to 5 minutes!

Heat your pan and add some vegan butter to coat the bottom and add a spoon of mixture. The mixture will start to bubble and when there’s bubbles over the whole pancake, flip it over.

Cook the pancake through until the desired texture and serve as a stack with maple syrup and festive berries. Add some icing sugar for an extra festive snowy look!
